Ted's Tender Tips Roast Corned Beef Rinse the brisket in cold water to remove the pickling juices. Place flat side up on a rack in a shallow roasting pan. Add 3 cups of water and cover with tinfoil. Roast at 300 degrees F for 2-1/2 hours or until fork tender. Uncover. Drain liquid and discard. For a sweeter taste, spoon some peach jam over the corned beef after it is cooked. Return it to the oven and cook until the glaze is hot- about 15 minutes longer. Bon Appetit!
