Hi Folks!
If you have been
shopping around for a good chef's knife you will see more and more styles of
knives with shallow dimples on the sides of the blade. These depressions are
called kullenschliff or a Granton edge.
This style of knife prevents
food from sticking to the blade. The depressions used to be found on Japanese
models only, but now you can find these dimples on all sorts of
knives.
